Bitter compounds are among the most underestimated constituents in the plant kingdom - and among the most clinically useful. In this course, we explore what bitters actually are, how they function in the body, and why both modern animals and their human companions are so often deficient in them. 

We begin with the fundamentals: the physiology of bitter taste perception, the role of TAS2R receptors, and the concept of the bitterness value. From there, we move into the practical territory of traditional herbal medicine: Amara classification, energetic properties, and the correct use of bitter herbs in everyday practice. A substantial part of the course focuses on animal health: recognizing and addressing bitter deficiency syndrome in dogs and cats, and working with bitters as part of a species-appropriate, trophorestorative approach.
